Default peeling cases

Hi guys

Looking for a bit of advice; I have a summer fete this Saturday and have a cupcake stall at it, I have suffered some cases peeling away from the cakes I done for an event last weekend. I believe this is because of the moisture. I don't have time to bake and frost all in the one day due to quanity. So, does anyone have any advise on how to store which would prevent this happening? I don't like freezing as I feel the cake goes sticky when it comes back to room temp. I have been storing in air tight containers and this is when the cases would peel as the moisture had nowhere to go. I'm baffled and I don't want the same problem I had last week and had to bin alot of cakes Please help.
